CRISPR (Clustered Regularly Interspaced Short Palindromic Repeats) is a family of DNA sequences found in prokaryotic organisms such as bacteria and archaea, which plays a key role in their antiviral defense system. CRISPR is being used to develop novel protein chip ingredients with improved nutritional profiles. Companies such as Beyond Meat and Impossible Foods are already using CRISPR to develop plant-based protein chip alternatives.
